Lobster is a species of crustacean from the order of decapods and the crayfish infra. The kitchen uses mainly large American lobsters and European lobsters. This dish is very exquisite and extremely tasty, although you have to push yourself – after all lobster will be cooked alive!
The lobster is cooked whole, only after cooking the lobster is divided into parts. The best meat is in the tail. How to cook lobster tail?
Lobster before cooking – preparation
The crustacean should be rinsed under running water and then placed in the freezer for about 15 minutes to allow it to fall asleep peacefully. Even if we buy it in a frozen form, it’s still worth defrosting, washing thoroughly, and then placing it in the freezer for a quarter of an hour.
Cooking in boiling water is the most popular method of preparing lobster. Pour water into a large pot, bring to a boil, add salt as an option. Place thawed lobster in a pot, head down. When the water begins to boil again, turn on the fire and simmer so that the water boils all the time. If it is frozen lobster, cook for 3 to 5 minutes. If lobster is alive, then about 12-15 minutes. The cooking time also depends on the amount of lobsters cooked in one pot. Time counts when the water boils again.
After cooking, put the ice lobster to cool for a few minutes.
How to peel a lobster?
First, separate the pliers with the rest of the lobster by hand (by twisting motion). It is similar with the tail. For this we also do not use any tools, but only our own hands. As with the pliers, which we simply “twisted”, we do it with the tail. With one hand we grab the body, the other by the tail and gently slightly to the right and to the left and break back. The tail should be very easy to separate from the body.
Pull the meat
Once we have the separated tail, we must remove the meat from it. We take it in two hands and simply crush it. We will then hear the cracking of armor. At this point, the meat will also separate from the shell. Then bend the armor as if we rolled the hat to the other side. This will also make it easier to remove the meat.
If the meat does not separate the first time, then we repeat the procedure. Take the separated meat with your hands. You can also use a regular fork. Insert into meat and simply pull out whole.
There is also a second way of removing meat from the tail. Just cut the meat in the tail along the knife and remove it.
Small tail tips. There’s meat there too. There is very little, but it is always meat. You can simply break them and draw the contents with your mouth, gently biting the shell.
