A salad, perfect for this Summer heat! I made this delicious recipe for dinner this weekend and served it up with pesto and cranberry stuffed chicken. It was delightful!
What you'll need:
* Raw Asparagus, ribboned into strips with a peeler
* Pine Nuts, toasted
* Fennel, thinly sliced
* Grape tomatoes, cut in half
* Parmesan Cheese, flaked
* Olive Oil
* Fresh lemon juice
* Salt & Pepper
(I generally mix about 2/3 lemon juice to 1/3 olive oil, dash with salt and pepper)
Toss together asparagus, fennel, tomatoes, and dressing in large bowl until evenly coated with dressing. Serve on plates and then sprinkle the toasted pine nuts and Parmesan cheese on top. It's that simple! Enjoy!
