1. Ribboned Asparagus & Pine Nut Salad

    A salad, perfect for this Summer heat!  I made this delicious recipe for dinner this weekend and served it up with pesto and cranberry stuffed chicken.  It was delightful!

    What you'll need:
    * Raw Asparagus, ribboned into strips with a peeler
    * Pine Nuts, toasted
    * Fennel, thinly sliced
    * Grape tomatoes, cut in half
    * Parmesan Cheese, flaked

    * Olive Oil
    * Fresh lemon juice
    * Salt & Pepper
    (I generally mix about 2/3 lemon juice to 1/3 olive oil, dash with salt and pepper)

    Toss together asparagus, fennel, tomatoes, and dressing in large bowl until evenly coated with dressing.  Serve on plates and then sprinkle the toasted pine nuts and Parmesan cheese on top.  It's that simple!  Enjoy!

      Sounds delicious. I'm thinking of replacing the asparagus with ribbons of courgette and maybe chuck in a handful of cooked pasta.

    2. ohhh, that sounds good too! Let me know how it turns out. I've never had raw asparagus before this, but it was actually good!
