1. breakfast burritos
    This passed weekend I was camping in Washington on this beautiful little island called Anacortes.  Did I mention beautiful!? 

    In preparation for the trip, my sister and I decided to make what I call "campurritos."  These are pre-made breakfast burritos.  Just wake up and throw them on the fire for a mess-free breakfast experience (perfect for camping)!  You can even place the tin foil packages on the coals and let them warm while you make a french press.  OH I JUST LOVE CAMPING!  P.S. They are delicious!  So here's what we did:

    The Simple Ingredients: 

    * 16 Eggs
    * 1 lb. Sausage
    * 1 Yellow Onion
    * 3 Cloves Garlic, minced
    * 6 Med. Potatoes, chopped
    * 2 Cups Cheddar Cheese, shredded
    * 4 Green Onions, chopped
    * 3 T. Parsley, chopped
    * 8 or 9 Tortilla Shells
    * Salt & Pepper to taste
    * Tin Foil for wrapping
    Optional: Salsa and/or hot sauce 

    The Simple directions: 

    Chop potatoes and boil until soft.  Chop green onions and set aside.  Crack 16 eggs and cook over low heat until you have soft, scrambled eggs.  Salt and pepper to taste.  Saute yellow onions and garlic in 2 T. olive oil until fragrant.  Add sausage to onion mixture and cook all the way through.  In large bowl combine Sausage mixture, scrambled eggs, potatoes,  cheese, green onions, parsley, and Salt & Pepper.  Divide ingredients into 8 or 9 tortilla shells.  Roll and wrap in tin foil -- ready to throw on the fire!

      Thats a fantastic idea! I've needed this recipe for so long! My only question is that you could only do this for one breakfast, right, as I'm assuming a second batch wouldn't last a second night? Good for the morning after you arrive though so you can get out and do stuff straight away.

    2. No, they actually can last a few days! We had leftovers that were eaten on the second day for lunch! Just keep them all in a zip lock bag so they don't get wet and soggy, and they are good to go! I wouldn't go much past two days though :)

      I know this is an older post but I just came across it from Pinterest and it looks delicious!!!!! Question: How long do they take approximately to cook?

      I am thinking of making a batch throwing them in the freezer and using them as an easy dinner on the bbq or even just throwing them in the oven! Think it would work?

    4. If they aren't frozen, it shouldn't take too long to warm up. My friend actually throws them on the coals while we are camping, so they aren't in direct flames (they will burn if they are too close to the flames). Probably like 20 mins or so.

      I would think it would be about the same for the grill - and that's a great idea! Who doesn't like breakfast burritos for dinner!?

    7. Hmm, I'm not sure of the brand or exact shade - sorry! I borrowed this color from my sister when I was visiting her in Seattle, so I don't own it! It's some form of hot pink! (wish I owned it!)

      Another great idea is simple....when you buy meat, decide what will eventually go camping with you & do the marinating before you freeze it. Makes throwing that Tri Tip on the grill into a WOW camp dinner :)

      Lol I saw is and I thought it was a great idea. My Hsband loves breakfast burritos and I don't think I would have ever thought to make them camping. When I read the writing above the recipe I had to giggle a little to myself cause I live I'm Burlington Washington. You have to go through burlington to go to anacortes. Lol it is about 15 min away from my house we go there everyone I a while. I would recommend the next time you come camping here though that you go to deception pass instead it is just as beautiful but you can camp next to a freshwater lake but then you turn around and you a staring at the ocean. There are tons of hiking trails and if you travel to oak harbor they still have a drive in movie theatre that can be a lot of fun on those nice summer nights.

      I made these for this weekend! We were staying somewhere that didn't allow campfires and we didn't bring a grill, so I froze the mixture without putting it in the tortillas (and kept the cheese on the side as well) with the intention of just reheating the mixture on the camp stove. Shouldn't have frozen it...what a pain in the butt! The second day, we got rained out...so as soon as we got home, I threw the mixture into tortillas and froze them to have for breakfast this week. Just had one, heated in the microwave - so yummy :) Wish I could have tried it on the fire though.

      I think I used smaller tortillas than what you did, because it made WAY more than 8 burritos. I also added a bunch of veggies to half of the mix for me (asparagus, peppers).

      I think if you mix it all ahead on your travel day then wake up the next morning, fill the tortillas with the mix and cheese, wrap them up and roll them in foil....Then pop it on the grill that it would be an easy breakfast or snack. That way there is no overly wet mixture in the tortilla. Hey a little sour cream and guacamole...never hurt anyone too. Do it with black beans and spanish rice. Yum.

      Not a burrito but we went camping with friends a few years ago and they had breakfast planned. They had pre-split "Australia" biscuits (a softer version of an English muffin but we use English muffins when we do them) in a bag and ready to go. In another bag they had pre-scrambled three kinds of sausage (regular, hot and Italian) and then cooled and frozen it in a Ziploc in the cooler. Also in the cooler was a Ziploc of frozen cheese (cheddar, mozzarella and american). So we throw three bags of frozen items (bread, precooked sausage, and a mix of shredded and chunk ed cheese) in the cooler and off we go. The next morning they pull out a flat cookie sheet and a big pot and set them on the coals of the fire. He dumps the sausage in the pot and it starts heating up pretty quick. It is thawed and precooked so all we are looking for is HOT. Meanwhile, his wife tosses the split muffin halves on the flat pan and lets them start dry toasting and heating up. When the sausage is hot. He dumped the bag of cheese in the pan with it and pulled it back away from the hottest part of the fire. She flipped the lovely muffins over to toast on the other side, while he stirred in the cheese. Two min. later they said, "It's done!" And started scooping sausage and cheese on a muffin and putting a top on it, and passing them around! I thought it was going to be a huge mess!
      But the Cheddar gave it tang, the Mozzarella made it string and stick together so it didn't fall out of the bun and the american added a wonderful creaminess to it! There were 5 couples on the trip, 10 adults and we all loved it and ate our fill! It has become a MUST have for at least 1 breakfast every year for our family weekly camping trip here in Alaska! This year I have added your burritos for morning #2!!

    21. This looks awesome! I think it must make a fair few, so I'll halve it for my husband, baby and I, but extras just means leftovers for dinner or the next day. Yum! I love Audrey Grant's suggestion, too. I'm Australian, but I don't know what the Australian biscuits are. I'll try the English muffins though! I'm never this organised for camping... It's usually a tray of sausages, some bread, and maybe some tinned spaghetti or baked beans. This has inspired me, and I'll be looking forward to it next time we go camping. Hopefully soon! (Before baby #2 arrives!)

      We made these last summer and they were awesome!! We are getting packed for our first camping of the summer, and of course we have to make campurritos! The best part is no dishes at the site. Yum!

      I had repinned this last year and remembered it for our Memorial Day camping trip. Oh my gosh, HUGE hit. They were so good that Hubs is having me make some for home as well to throw into the micro.

      We mixed ours up a bit by baking tater tots to put in them instead of boiled potatoes (bought potatoes but there was a bad one in the mix that made them all yucky!). Next time, we'll mix up the ingredients a bit & make several different batches. It made mornings so simple, and they were absolutely delish!

    29. This made about 8 - 10 campurritos. You could easily half the recipe and just make enough for the two of you (and maybe a few for the freezer!).

      I made these for our group when we went to Joshua Tree. I froze them and threw them into the cooler.
      They were such a hit that the family wants them now as fast frozen breakfast options. So, now I am making a ton of them them and freezing them. Thanks for such a tasty idea!

      Also, with the cheese and all, they stand up great frozen! They didnt get soggy! Heat them through and then put them on the grill to get crispy. They were so big we would eat half of them for breakfast and then carry the other half with us to eat along our hike.

      If frozen, how long in the campfire? Sorry, I'm a newbie...we are eating these the 2nd morning we're there, meaning they'll be in the cooler for 2 days. Still freeze?

    38. I never freeze mine and just make them before we go. However, if you do freeze ahead of time and eat them a day or two after being in the cooler I think they would turn out fine. Just don't put them directly in the fire and allow them more time to warm up. Otherwise, they may burn on the outside and not be warn on the inside. :(

      This recipe is awesome! Ty so much for sharing! Screw camping, I just made some to enjoy at home ;) Added: jalapeno Havarti cheese, cilantro, olive and avocado oil, lightly steamed (and then shredded) kale, Newman's salsa, and instead of sausage I substituted Johnsonville's spicy ground pork and a pack of bacon. Lot's of leftovers! Next time I'll try to get some beans and guacamole in there. Such a well rounded, nutrient rich, meal. So full right now *happy sigh* thanks again! :)

      This recipe worked out AWESOME!! We didn't eat them until day 3 and they came out great, not soggy at all. Even had left overs for after the camping trip and just popped them in the microwave at home and they were still fantastic. I'm going to bring this to every camping trip from now on. :)

    42. I like the wine part! This is great, I'm taking my son camping for the first time and I wanted to make sure we weren't food bored. Will be using veggie patties instead but I think it should work well.

    45. I made these a few months ago for a 5 day Yellowstone trip with my friends. I somehow ended up with way too much of the potatoes, but other than that complaint, it was a big hit. I'm going camping again with the same friends this weekend and they've requested I make these again! It's a lot of preparation, but it's well worth it!
